Use in cream soups or on toast.

MEDIUM:

2 tbsp. flour
1 1/2 tbsp. butter
1/2 tsp. salt
1 c. liquid

Use with creamed vegetables or for gravy.

THICK:

3 tbsp. flour
2 tbsp. butter
1 tsp. salt
1 c. liquid

Use for cooked salad dressing.

VERY THICK:

4 tbsp. flour
3 tbsp. butter
1 tsp. salt
1 c. liquid

Use for souffles and croquettes.

Melt butter in saucepan over a LOW flame. Remove from fire and stir in salt and flour to a smooth paste. Add milk and stir until well-mixed. Return to LOW flame, stir constantly and bring to a boil. Let boil 1 minute, continuing stirring constantly.
