BREAST OF CHICKEN IN WINE
Ingredients
- 2 chicken cutlets
- Dash of salt & pepper
- 8 oz. dry white wine
- 2 c. spinach
- 2 tbsp. butter
- 2 tbsp. lemon juice
- 1/4 c. grated Parmesan
Directions
Place chicken in shallow baking dish. Sprinkle with salt and pepper. Pour wine over chicken, cover with aluminum foil and bake at 350 degrees for 20 minutes. Mince spinach leaves and combine with remaining ingredients. Remove chicken, adjust temperature to broil. Spread spinach mixture on chicken and broil about 5 minutes.
